Avocado Toast Power Stack
Ingredients
- 4 slices Whole grain bread Thick-cut.
- 2 large Avocados Ripe.
- 1/2 cup Hummus
- 1 can (15 oz) Chickpeas Drained and roasted.
- 1 cup Cherry tomatoes Halved.
- 1 cup Microgreens For topping.
- 2 tbsp Hemp hearts For topping.
- 1 tbsp Lemon juice
- 1/4 tsp Red chili flakes Optional.
- 1 tbsp Olive oil For chickpeas.
Steps
- Preheat oven to 400°F (200°C).
- Toss drained chickpeas with olive oil, salt, and pepper. Roast for 20 minutes until crispy.
- Toast bread slices until golden.
- Mash avocados with lemon juice, salt, and pepper.
- Spread hummus on each toast slice.
- Top with mashed avocado, roasted chickpeas, and cherry tomatoes.
- Garnish with microgreens, hemp hearts, and chili flakes if using.
- Serve immediately.
