Ingredients

  • 4 slices Whole grain bread Thick-cut.
  • 2 large Avocados Ripe.
  • 1/2 cup Hummus
  • 1 can (15 oz) Chickpeas Drained and roasted.
  • 1 cup Cherry tomatoes Halved.
  • 1 cup Microgreens For topping.
  • 2 tbsp Hemp hearts For topping.
  • 1 tbsp Lemon juice
  • 1/4 tsp Red chili flakes Optional.
  • 1 tbsp Olive oil For chickpeas.

Steps

  1. Preheat oven to 400°F (200°C).
  2. Toss drained chickpeas with olive oil, salt, and pepper. Roast for 20 minutes until crispy.
  3. Toast bread slices until golden.
  4. Mash avocados with lemon juice, salt, and pepper.
  5. Spread hummus on each toast slice.
  6. Top with mashed avocado, roasted chickpeas, and cherry tomatoes.
  7. Garnish with microgreens, hemp hearts, and chili flakes if using.
  8. Serve immediately.
