Blueberry Protein Muffins
Ingredients
- 1.5 cups Whole wheat flour
- 1/2 cup (50g) Vegan protein powder Vanilla flavor.
- 2 tsp Baking powder
- 1/2 tsp Baking soda
- 1 tsp Ground cinnamon
- 1 cup Almond milk
- 1/2 cup Maple syrup
- 1/2 cup Unsweetened applesauce
- 2 tsp Vanilla extract
- 1.5 cups Fresh blueberries
- 1/4 tsp Salt
Steps
- Preheat oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners.
- In a large bowl, whisk together flour, protein powder, baking powder, baking soda, cinnamon, and salt.
- In another bowl, mix almond milk, maple syrup, applesauce, and vanilla.
- Add wet ingredients to dry ingredients and stir until just combined.
- Gently fold in blueberries, being careful not to overmix.
- Divide batter evenly among muffin cups.
- Bake for 22-25 minutes until a toothpick comes out clean.
- Cool in pan for 5 minutes, then transfer to a wire rack.
- Store in airtight container for up to 5 days.
