Ingredients

  • 1.5 cups Whole wheat flour
  • 1/2 cup (50g) Vegan protein powder Vanilla flavor.
  • 2 tsp Baking powder
  • 1/2 tsp Baking soda
  • 1 tsp Ground cinnamon
  • 1 cup Almond milk
  • 1/2 cup Maple syrup
  • 1/2 cup Unsweetened applesauce
  • 2 tsp Vanilla extract
  • 1.5 cups Fresh blueberries
  • 1/4 tsp Salt

Steps

  1. Preheat oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners.
  2. In a large bowl, whisk together flour, protein powder, baking powder, baking soda, cinnamon, and salt.
  3. In another bowl, mix almond milk, maple syrup, applesauce, and vanilla.
  4. Add wet ingredients to dry ingredients and stir until just combined.
  5. Gently fold in blueberries, being careful not to overmix.
  6. Divide batter evenly among muffin cups.
  7. Bake for 22-25 minutes until a toothpick comes out clean.
  8. Cool in pan for 5 minutes, then transfer to a wire rack.
  9. Store in airtight container for up to 5 days.
