Ingredients

  • 4 large Whole wheat tortillas Burrito size.
  • 8 oz Firm tofu Crumbled.
  • 1 large Sweet potato Diced small.
  • 1 can (15 oz) Black beans Drained.
  • 1/2 medium Red onion Diced.
  • 1 medium Bell pepper Diced.
  • 1/2 tsp Ground turmeric
  • 1 tsp Ground cumin
  • 1/2 cup Salsa For topping.
  • 1 medium Avocado Sliced.
  • 2 tbsp Olive oil

Steps

  1. Heat 1 tbsp olive oil in a large skillet and cook diced sweet potato for 10 minutes until tender.
  2. Remove sweet potato and set aside.
  3. Add remaining olive oil and sauté onion and bell pepper for 5 minutes.
  4. Add crumbled tofu, turmeric, and cumin. Cook for 5-7 minutes until golden.
  5. Add back sweet potato and black beans, heating through.
  6. Season with salt and pepper to taste.
  7. Warm tortillas and divide filling among them.
  8. Top with salsa and avocado slices.
  9. Fold into burritos and serve immediately or wrap for meal prep.
