Breakfast Burrito Power Wrap
Ingredients
- 4 large Whole wheat tortillas Burrito size.
- 8 oz Firm tofu Crumbled.
- 1 large Sweet potato Diced small.
- 1 can (15 oz) Black beans Drained.
- 1/2 medium Red onion Diced.
- 1 medium Bell pepper Diced.
- 1/2 tsp Ground turmeric
- 1 tsp Ground cumin
- 1/2 cup Salsa For topping.
- 1 medium Avocado Sliced.
- 2 tbsp Olive oil
Steps
- Heat 1 tbsp olive oil in a large skillet and cook diced sweet potato for 10 minutes until tender.
- Remove sweet potato and set aside.
- Add remaining olive oil and sauté onion and bell pepper for 5 minutes.
- Add crumbled tofu, turmeric, and cumin. Cook for 5-7 minutes until golden.
- Add back sweet potato and black beans, heating through.
- Season with salt and pepper to taste.
- Warm tortillas and divide filling among them.
- Top with salsa and avocado slices.
- Fold into burritos and serve immediately or wrap for meal prep.
