Breakfast Power Cookies
Ingredients
- 2 cups Rolled oats
- 1 cup Whole wheat flour
- 1 tsp Baking powder
- 1 tsp Ground cinnamon
- 2 large Ripe bananas Mashed.
- 1/2 cup Almond butter
- 1/3 cup Maple syrup
- 1 tsp Vanilla extract
- 1/2 cup Walnuts Chopped.
- 1/4 cup Pumpkin seeds
- 1/2 cup Dried cranberries
- 1/2 cup Dark chocolate chips Vegan.
Steps
- Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a large bowl, mix oats, flour, baking powder, and cinnamon.
- In another bowl, mash bananas and mix with almond butter, maple syrup, and vanilla.
- Add wet ingredients to dry ingredients and stir until combined.
- Fold in walnuts, pumpkin seeds, dried cranberries, and chocolate chips.
- Drop heaping tablespoons of dough onto prepared baking sheets, spacing 2 inches apart.
- Flatten slightly with the back of a spoon.
- Bake for 15-18 minutes until edges are golden.
- Cool on baking sheet for 5 minutes, then transfer to wire rack.
- Store in airtight container for up to 1 week.
