Ingredients

  • 2 cups Rolled oats
  • 1 cup Whole wheat flour
  • 1 tsp Baking powder
  • 1 tsp Ground cinnamon
  • 2 large Ripe bananas Mashed.
  • 1/2 cup Almond butter
  • 1/3 cup Maple syrup
  • 1 tsp Vanilla extract
  • 1/2 cup Walnuts Chopped.
  • 1/4 cup Pumpkin seeds
  • 1/2 cup Dried cranberries
  • 1/2 cup Dark chocolate chips Vegan.

Steps

  1. Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large bowl, mix oats, flour, baking powder, and cinnamon.
  3. In another bowl, mash bananas and mix with almond butter, maple syrup, and vanilla.
  4. Add wet ingredients to dry ingredients and stir until combined.
  5. Fold in walnuts, pumpkin seeds, dried cranberries, and chocolate chips.
  6. Drop heaping tablespoons of dough onto prepared baking sheets, spacing 2 inches apart.
  7. Flatten slightly with the back of a spoon.
  8. Bake for 15-18 minutes until edges are golden.
  9. Cool on baking sheet for 5 minutes, then transfer to wire rack.
  10. Store in airtight container for up to 1 week.
