Ingredients

  • 2 cups dry Basmati rice
  • 2 cans (15 oz each) Chickpeas Drained.
  • 2 large Sweet potatoes Cubed.
  • 2 cans (14 oz each) Coconut milk Full-fat.
  • 3/4 cup Raw cashews
  • 1 large Yellow onion Diced.
  • 3 tbsp Curry powder
  • 2 tbsp Fresh ginger Grated.
  • 5 cloves Fresh garlic Minced.
  • 3 cups Spinach
  • 2 tbsp Coconut oil
  • 4 pieces Naan bread For serving.

Steps

  1. Cook basmati rice according to package directions.
  2. Heat coconut oil in a large pot and sauté onion until soft.
  3. Add garlic, ginger, and curry powder. Cook for 2 minutes until fragrant.
  4. Add sweet potato and coconut milk. Simmer for 15 minutes.
  5. Add chickpeas, cashews, and spinach. Cook for 10 more minutes.
  6. Season with salt and pepper to taste.
  7. Warm naan bread.
  8. Serve curry over generous portions of rice with naan on the side.
