Calorie-Dense Curry Feast
Ingredients
- 2 cups dry Basmati rice
- 2 cans (15 oz each) Chickpeas Drained.
- 2 large Sweet potatoes Cubed.
- 2 cans (14 oz each) Coconut milk Full-fat.
- 3/4 cup Raw cashews
- 1 large Yellow onion Diced.
- 3 tbsp Curry powder
- 2 tbsp Fresh ginger Grated.
- 5 cloves Fresh garlic Minced.
- 3 cups Spinach
- 2 tbsp Coconut oil
- 4 pieces Naan bread For serving.
Steps
- Cook basmati rice according to package directions.
- Heat coconut oil in a large pot and sauté onion until soft.
- Add garlic, ginger, and curry powder. Cook for 2 minutes until fragrant.
- Add sweet potato and coconut milk. Simmer for 15 minutes.
- Add chickpeas, cashews, and spinach. Cook for 10 more minutes.
- Season with salt and pepper to taste.
- Warm naan bread.
- Serve curry over generous portions of rice with naan on the side.
