Ingredients

  • 1/2 cup Chia seeds
  • 2 cups Coconut milk Full-fat for creamier texture.
  • 3 tbsp Maple syrup
  • 2 tsp Vanilla extract
  • 1 cup Fresh strawberries Sliced.
  • 1 cup Fresh blueberries
  • 1/2 cup Granola
  • 1/4 cup Sliced almonds For topping.

Steps

  1. In a large bowl, whisk together chia seeds, coconut milk, maple syrup, and vanilla.
  2. Cover and refrigerate for at least 4 hours or overnight, stirring once after 30 minutes.
  3. When ready to serve, give the chia pudding a good stir.
  4. In serving glasses or jars, layer chia pudding, berries, and granola.
  5. Repeat layers until glasses are full.
  6. Top with sliced almonds.
  7. Serve immediately or store in refrigerator for up to 3 days.
