Chickpea Spinach Curry

Ingredients
- 2 cans (15 oz each) Chickpeas Drained and rinsed.
- 3 cups Spinach Fresh or frozen.
- 1 can (14 oz) Coconut milk Full-fat recommended.
- 1 can (14 oz) Tomatoes Diced.
- 1 medium Onion Chopped.
- 3 cloves Garlic Minced.
- 1 tbsp Curry powder
- 1 tsp Cumin
- To taste Salt and pepper
Steps
- Saute onion and garlic in a pan until soft.
- Add curry powder and cumin; cook for 1 minute.
- Stir in tomatoes, coconut milk, and chickpeas; simmer for 10 minutes.
- Add spinach and cook until wilted.
- Season with salt and pepper; serve with rice or naan.
