Ingredients

  • 2 cans (15 oz each) Chickpeas Drained and rinsed.
  • 3 cups Spinach Fresh or frozen.
  • 1 can (14 oz) Coconut milk Full-fat recommended.
  • 1 can (14 oz) Tomatoes Diced.
  • 1 medium Onion Chopped.
  • 3 cloves Garlic Minced.
  • 1 tbsp Curry powder
  • 1 tsp Cumin
  • To taste Salt and pepper

Steps

  1. Saute onion and garlic in a pan until soft.
  2. Add curry powder and cumin; cook for 1 minute.
  3. Stir in tomatoes, coconut milk, and chickpeas; simmer for 10 minutes.
  4. Add spinach and cook until wilted.
  5. Season with salt and pepper; serve with rice or naan.
