Ingredients

  • 2 cups Medjool dates Pitted.
  • 1/2 cup Raw cashews
  • 1 cup Shredded coconut Divided.
  • 1 tsp Vanilla extract
  • pinch Salt
  • 1 tsp Lemon zest Optional.

Steps

  1. In a food processor, pulse cashews until finely ground.
  2. Add dates, 1/2 cup coconut, vanilla, salt, and lemon zest if using.
  3. Process until mixture forms a sticky dough.
  4. Divide mixture into 12 portions.
  5. Roll each portion into a log shape about 2 inches long.
  6. Roll each log in remaining shredded coconut to coat.
  7. Place on parchment paper and refrigerate for 1 hour to firm up.
  8. Store in airtight container in refrigerator for up to 3 weeks.
  9. Perfect for sweet cravings or quick energy.
