Coconut Date Rolls
Ingredients
- 2 cups Medjool dates Pitted.
- 1/2 cup Raw cashews
- 1 cup Shredded coconut Divided.
- 1 tsp Vanilla extract
- pinch Salt
- 1 tsp Lemon zest Optional.
Steps
- In a food processor, pulse cashews until finely ground.
- Add dates, 1/2 cup coconut, vanilla, salt, and lemon zest if using.
- Process until mixture forms a sticky dough.
- Divide mixture into 12 portions.
- Roll each portion into a log shape about 2 inches long.
- Roll each log in remaining shredded coconut to coat.
- Place on parchment paper and refrigerate for 1 hour to firm up.
- Store in airtight container in refrigerator for up to 3 weeks.
