Ingredients

  • 3 cups Shredded coconut Unsweetened.
  • 1/2 cup (50g) Vegan protein powder Vanilla flavor.
  • 1/2 cup Maple syrup
  • 1/4 cup Coconut oil Melted.
  • 2 tsp Vanilla extract
  • 1/4 tsp Salt
  • 1/2 cup Dark chocolate chips Vegan, for drizzling.

Steps

  1. Preheat oven to 325°F (165°C) and line baking sheet with parchment paper.
  2. In a large bowl, mix shredded coconut and protein powder.
  3. In another bowl, whisk together maple syrup, coconut oil, vanilla, and salt.
  4. Pour wet ingredients into dry and mix until well combined.
  5. Form into 16 mounds on baking sheet.
  6. Bake for 18-22 minutes until edges are golden brown.
  7. Cool completely on baking sheet.
  8. Melt chocolate and drizzle over cooled macaroons.
  9. Store in airtight container for up to 1 week.
