Coconut Protein Macaroons
Ingredients
- 3 cups Shredded coconut Unsweetened.
- 1/2 cup (50g) Vegan protein powder Vanilla flavor.
- 1/2 cup Maple syrup
- 1/4 cup Coconut oil Melted.
- 2 tsp Vanilla extract
- 1/4 tsp Salt
- 1/2 cup Dark chocolate chips Vegan, for drizzling.
Steps
- Preheat oven to 325°F (165°C) and line baking sheet with parchment paper.
- In a large bowl, mix shredded coconut and protein powder.
- In another bowl, whisk together maple syrup, coconut oil, vanilla, and salt.
- Pour wet ingredients into dry and mix until well combined.
- Form into 16 mounds on baking sheet.
- Bake for 18-22 minutes until edges are golden brown.
- Cool completely on baking sheet.
- Melt chocolate and drizzle over cooled macaroons.
- Store in airtight container for up to 1 week.
