Ingredients

  • 2 cups Medjool dates Pitted.
  • 1 cup Raw almonds
  • 1 cup Rolled oats
  • 1/2 cup (50g) Vegan protein powder Vanilla flavor.
  • 1/2 cup Almond butter
  • 3 tbsp Coconut oil Divided.
  • 2 tsp Vanilla extract
  • 1 cup Dark chocolate chips Vegan.
  • 1/4 tsp Salt

Steps

  1. Line an 8x8 inch pan with parchment paper.
  2. Pulse almonds and oats in food processor until coarsely ground.
  3. Add 1 cup dates and process until mixture holds together.
  4. Press firmly into prepared pan for bottom layer.
  5. Blend remaining dates, almond butter, 1 tbsp coconut oil, vanilla, and salt until smooth caramel.
  6. Spread caramel layer over base and freeze for 30 minutes.
  7. Melt chocolate chips with remaining coconut oil.
  8. Pour chocolate over caramel layer and spread evenly.
  9. Freeze for 1 hour until set, then cut into 12 bars.
  10. Store in refrigerator for up to 2 weeks.
