Date Caramel Protein Bars
Ingredients
- 2 cups Medjool dates Pitted.
- 1 cup Raw almonds
- 1 cup Rolled oats
- 1/2 cup (50g) Vegan protein powder Vanilla flavor.
- 1/2 cup Almond butter
- 3 tbsp Coconut oil Divided.
- 2 tsp Vanilla extract
- 1 cup Dark chocolate chips Vegan.
- 1/4 tsp Salt
Steps
- Line an 8x8 inch pan with parchment paper.
- Pulse almonds and oats in food processor until coarsely ground.
- Add 1 cup dates and process until mixture holds together.
- Press firmly into prepared pan for bottom layer.
- Blend remaining dates, almond butter, 1 tbsp coconut oil, vanilla, and salt until smooth caramel.
- Spread caramel layer over base and freeze for 30 minutes.
- Melt chocolate chips with remaining coconut oil.
- Pour chocolate over caramel layer and spread evenly.
- Freeze for 1 hour until set, then cut into 12 bars.
- Store in refrigerator for up to 2 weeks.
