Jumbo Falafel Wrap
Ingredients
- 2 cans (15 oz each) Chickpeas Drained for falafel.
- 2 extra-large Whole wheat tortillas Burrito size.
- 1 medium Yellow onion Chopped.
- 1 cup Fresh parsley Chopped.
- 4 cloves Fresh garlic
- 2 tsp Ground cumin
- 1 tsp Ground coriander
- 1/4 cup Whole wheat flour For binding.
- 1 cup Hummus
- 1/4 cup Tahini For sauce.
- 3 tbsp Lemon juice
- 2 cups Lettuce Shredded.
- 2 medium Tomatoes Diced.
- 1 large Cucumber Diced.
- 1/4 cup Olive oil For frying.
Steps
- Pulse chickpeas, onion, parsley, garlic, cumin, coriander, and flour in food processor until combined but not smooth.
- Form into 12 falafel balls and flatten slightly.
- Heat olive oil in skillet and fry falafel for 3-4 minutes per side until golden.
- Make tahini sauce by mixing tahini, lemon juice, and 2 tbsp water.
- Warm tortillas.
- Spread hummus on each tortilla.
- Divide falafel, lettuce, tomato, and cucumber between wraps.
- Drizzle generously with tahini sauce.
- Fold into large wraps and serve.
