Ingredients

  • 2 cans (15 oz each) Chickpeas Drained for falafel.
  • 2 extra-large Whole wheat tortillas Burrito size.
  • 1 medium Yellow onion Chopped.
  • 1 cup Fresh parsley Chopped.
  • 4 cloves Fresh garlic
  • 2 tsp Ground cumin
  • 1 tsp Ground coriander
  • 1/4 cup Whole wheat flour For binding.
  • 1 cup Hummus
  • 1/4 cup Tahini For sauce.
  • 3 tbsp Lemon juice
  • 2 cups Lettuce Shredded.
  • 2 medium Tomatoes Diced.
  • 1 large Cucumber Diced.
  • 1/4 cup Olive oil For frying.

Steps

  1. Pulse chickpeas, onion, parsley, garlic, cumin, coriander, and flour in food processor until combined but not smooth.
  2. Form into 12 falafel balls and flatten slightly.
  3. Heat olive oil in skillet and fry falafel for 3-4 minutes per side until golden.
  4. Make tahini sauce by mixing tahini, lemon juice, and 2 tbsp water.
  5. Warm tortillas.
  6. Spread hummus on each tortilla.
  7. Divide falafel, lettuce, tomato, and cucumber between wraps.
  8. Drizzle generously with tahini sauce.
  9. Fold into large wraps and serve.
