Lentil and Quinoa Power Bowl

Ingredients
- 1 cup Quinoa Rinsed and drained.
- 1 cup Green lentils Cooked until tender.
- 2 cups Spinach Fresh or frozen.
- 1 cup Cherry tomatoes Halved.
- 1 Avocado Sliced.
- 2 tbsp Olive oil Extra virgin.
- 2 tbsp Lemon juice Freshly squeezed.
- To taste Salt and pepper
Steps
- Cook quinoa according to package instructions.
- Cook lentils in boiling water until tender, about 20 minutes.
- Combine quinoa, lentils, spinach, and tomatoes in a large bowl.
- Drizzle with olive oil and lemon juice; season with salt and pepper.
- Top with avocado slices and serve immediately.
