Ingredients

  • 1 cup Quinoa Rinsed and drained.
  • 1 cup Green lentils Cooked until tender.
  • 2 cups Spinach Fresh or frozen.
  • 1 cup Cherry tomatoes Halved.
  • 1 Avocado Sliced.
  • 2 tbsp Olive oil Extra virgin.
  • 2 tbsp Lemon juice Freshly squeezed.
  • To taste Salt and pepper

Steps

  1. Cook quinoa according to package instructions.
  2. Cook lentils in boiling water until tender, about 20 minutes.
  3. Combine quinoa, lentils, spinach, and tomatoes in a large bowl.
  4. Drizzle with olive oil and lemon juice; season with salt and pepper.
  5. Top with avocado slices and serve immediately.
