Ingredients

  • 2 cups cooked Brown rice
  • 2 cups cooked Black beans
  • 1 cup cooked Pinto beans
  • 2 large Avocados Made into guacamole.
  • 1 cup Corn Roasted.
  • 2 medium Bell peppers Sautéed.
  • 1 medium Red onion Sautéed.
  • 1/2 cup Raw cashews For crema.
  • 3 tbsp Lime juice
  • 2 tsp Ground cumin
  • 1 tsp Chili powder
  • 1 cup Tortilla chips Crushed for topping.
  • 2 tbsp Olive oil

Steps

  1. Cook brown rice according to package directions.
  2. Heat black beans and pinto beans with cumin and chili powder.
  3. Sauté bell peppers and onions in olive oil until soft.
  4. Make guacamole by mashing avocados with lime juice and salt.
  5. Blend cashews with 1/4 cup water and lime juice to make crema.
  6. In a large bowl, layer rice, beans, vegetables, and corn.
  7. Top generously with guacamole, cashew crema, and crushed tortilla chips.
  8. Serve immediately.
