Loaded Vegan Burrito Bowl
Ingredients
- 2 cups cooked Brown rice
- 2 cups cooked Black beans
- 1 cup cooked Pinto beans
- 2 large Avocados Made into guacamole.
- 1 cup Corn Roasted.
- 2 medium Bell peppers Sautéed.
- 1 medium Red onion Sautéed.
- 1/2 cup Raw cashews For crema.
- 3 tbsp Lime juice
- 2 tsp Ground cumin
- 1 tsp Chili powder
- 1 cup Tortilla chips Crushed for topping.
- 2 tbsp Olive oil
Steps
- Cook brown rice according to package directions.
- Heat black beans and pinto beans with cumin and chili powder.
- Sauté bell peppers and onions in olive oil until soft.
- Make guacamole by mashing avocados with lime juice and salt.
- Blend cashews with 1/4 cup water and lime juice to make crema.
- In a large bowl, layer rice, beans, vegetables, and corn.
- Top generously with guacamole, cashew crema, and crushed tortilla chips.
- Serve immediately.
