Massive Protein Pasta Bowl
Ingredients
- 1 lb Whole wheat pasta Penne or rigatoni.
- 12 oz Plain tempeh Cubed.
- 2 cans (15 oz each) White beans Drained.
- 1 cup Sun-dried tomatoes Chopped.
- 1 cup Raw cashews Soaked for sauce.
- 1/4 cup Nutritional yeast
- 4 cloves Fresh garlic
- 3 cups Spinach Fresh.
- 2 tbsp Lemon juice
- 3 tbsp Olive oil
Steps
- Cook pasta according to package directions, drain and set aside.
- Cube tempeh and pan-fry in 2 tbsp olive oil until golden and crispy.
- Blend soaked cashews with 1 cup water, nutritional yeast, lemon juice, and garlic until creamy.
- In a large pot, heat remaining olive oil and sauté sun-dried tomatoes for 2 minutes.
- Add white beans, cooked pasta, tempeh, and cashew sauce to the pot.
- Stir in fresh spinach until wilted.
- Season with salt and pepper.
- Divide into 3 large portions and serve hot.
