Ingredients

  • 1 lb Whole wheat pasta Penne or rigatoni.
  • 12 oz Plain tempeh Cubed.
  • 2 cans (15 oz each) White beans Drained.
  • 1 cup Sun-dried tomatoes Chopped.
  • 1 cup Raw cashews Soaked for sauce.
  • 1/4 cup Nutritional yeast
  • 4 cloves Fresh garlic
  • 3 cups Spinach Fresh.
  • 2 tbsp Lemon juice
  • 3 tbsp Olive oil

Steps

  1. Cook pasta according to package directions, drain and set aside.
  2. Cube tempeh and pan-fry in 2 tbsp olive oil until golden and crispy.
  3. Blend soaked cashews with 1 cup water, nutritional yeast, lemon juice, and garlic until creamy.
  4. In a large pot, heat remaining olive oil and sauté sun-dried tomatoes for 2 minutes.
  5. Add white beans, cooked pasta, tempeh, and cashew sauce to the pot.
  6. Stir in fresh spinach until wilted.
  7. Season with salt and pepper.
  8. Divide into 3 large portions and serve hot.
