Ingredients

  • 3 cups Rolled oats
  • 1 cup Natural peanut butter
  • 1/2 cup Maple syrup
  • 1/4 cup Brown rice syrup For binding.
  • 1/3 cup Pumpkin seeds
  • 1/2 cup Dried cranberries
  • 1 tsp Vanilla extract
  • 1/4 tsp Salt

Steps

  1. Preheat oven to 325°F (165°C) and line a 9x13 inch pan with parchment paper.
  2. In a large bowl, combine oats, pumpkin seeds, dried cranberries, and salt.
  3. In a small saucepan, heat peanut butter, maple syrup, and brown rice syrup until smooth and combined.
  4. Stir in vanilla extract.
  5. Pour wet mixture over dry ingredients and mix thoroughly.
  6. Press mixture firmly and evenly into prepared pan.
  7. Bake for 25-30 minutes until edges are golden.
  8. Cool completely in pan before cutting into 12 bars.
  9. Wrap individually and store at room temperature for up to 1 week.
  10. Refrigerate for up to 3 weeks or freeze for 3 months.
