Peanut Butter Granola Bars
Ingredients
- 3 cups Rolled oats
- 1 cup Natural peanut butter
- 1/2 cup Maple syrup
- 1/4 cup Brown rice syrup For binding.
- 1/3 cup Pumpkin seeds
- 1/2 cup Dried cranberries
- 1 tsp Vanilla extract
- 1/4 tsp Salt
Steps
- Preheat oven to 325°F (165°C) and line a 9x13 inch pan with parchment paper.
- In a large bowl, combine oats, pumpkin seeds, dried cranberries, and salt.
- In a small saucepan, heat peanut butter, maple syrup, and brown rice syrup until smooth and combined.
- Stir in vanilla extract.
- Pour wet mixture over dry ingredients and mix thoroughly.
- Press mixture firmly and evenly into prepared pan.
- Bake for 25-30 minutes until edges are golden.
- Cool completely in pan before cutting into 12 bars.
- Wrap individually and store at room temperature for up to 1 week.
- Refrigerate for up to 3 weeks or freeze for 3 months.
