Ingredients

  • 1 cup Natural peanut butter
  • 1/2 cup (50g) Vegan protein powder Vanilla flavor.
  • 1/3 cup Maple syrup
  • 2 tbsp Ground flaxseed Mixed with 6 tbsp water.
  • 1 tsp Vanilla extract
  • 1/2 tsp Baking soda
  • 1/3 cup Dark chocolate chips Vegan, optional.

Steps

  1. Preheat oven to 350°F (175°C) and line baking sheet with parchment paper.
  2. Mix flax meal with water and let sit for 5 minutes.
  3. In a large bowl, mix peanut butter, protein powder, maple syrup, flax egg, vanilla, and baking soda.
  4. Fold in chocolate chips if using.
  5. Roll into 12 balls and place on baking sheet.
  6. Flatten with a fork in crisscross pattern.
  7. Bake for 12-15 minutes until edges are golden.
  8. Cool on baking sheet for 5 minutes before transferring to wire rack.
  9. Store in airtight container for up to 1 week.
