Peanut Butter Protein Cookies
Ingredients
- 1 cup Natural peanut butter
- 1/2 cup (50g) Vegan protein powder Vanilla flavor.
- 1/3 cup Maple syrup
- 2 tbsp Ground flaxseed Mixed with 6 tbsp water.
- 1 tsp Vanilla extract
- 1/2 tsp Baking soda
- 1/3 cup Dark chocolate chips Vegan, optional.
Steps
- Preheat oven to 350°F (175°C) and line baking sheet with parchment paper.
- Mix flax meal with water and let sit for 5 minutes.
- In a large bowl, mix peanut butter, protein powder, maple syrup, flax egg, vanilla, and baking soda.
- Fold in chocolate chips if using.
- Roll into 12 balls and place on baking sheet.
- Flatten with a fork in crisscross pattern.
- Bake for 12-15 minutes until edges are golden.
- Cool on baking sheet for 5 minutes before transferring to wire rack.
- Store in airtight container for up to 1 week.
