Ingredients

  • 1 lb Whole wheat pizza dough Store-bought or homemade.
  • 1 cup Crushed tomatoes For sauce.
  • 8 oz Plain tempeh Crumbled for sausage.
  • 1 cup Raw cashews For cheese sauce.
  • 1/4 cup Nutritional yeast
  • 2 medium Bell peppers Sliced.
  • 1 medium Red onion Sliced.
  • 1 cup Mushrooms Sliced.
  • 1/2 cup Black olives Sliced.
  • 2 tsp Dried oregano
  • 1 tsp Garlic powder
  • 1 tsp Fennel seeds For tempeh sausage.
  • 1/4 cup Olive oil Divided.

Steps

  1. Preheat oven to 450°F (230°C).
  2. Make tempeh sausage: crumble tempeh and sauté with fennel seeds, garlic powder, and 2 tbsp olive oil until browned.
  3. Make cashew cheese: blend cashews with nutritional yeast and 1/3 cup water until smooth.
  4. Roll out pizza dough and brush with olive oil.
  5. Spread crushed tomatoes, then dollops of cashew cheese.
  6. Top with tempeh sausage, peppers, onions, mushrooms, and olives.
  7. Drizzle with remaining olive oil and sprinkle with oregano.
  8. Bake for 15-18 minutes until crust is golden.
  9. Let cool 5 minutes, slice, and serve.
