Power Athlete Pizza
Ingredients
- 1 lb Whole wheat pizza dough Store-bought or homemade.
- 1 cup Crushed tomatoes For sauce.
- 8 oz Plain tempeh Crumbled for sausage.
- 1 cup Raw cashews For cheese sauce.
- 1/4 cup Nutritional yeast
- 2 medium Bell peppers Sliced.
- 1 medium Red onion Sliced.
- 1 cup Mushrooms Sliced.
- 1/2 cup Black olives Sliced.
- 2 tsp Dried oregano
- 1 tsp Garlic powder
- 1 tsp Fennel seeds For tempeh sausage.
- 1/4 cup Olive oil Divided.
Steps
- Preheat oven to 450°F (230°C).
- Make tempeh sausage: crumble tempeh and sauté with fennel seeds, garlic powder, and 2 tbsp olive oil until browned.
- Make cashew cheese: blend cashews with nutritional yeast and 1/3 cup water until smooth.
- Roll out pizza dough and brush with olive oil.
- Spread crushed tomatoes, then dollops of cashew cheese.
- Top with tempeh sausage, peppers, onions, mushrooms, and olives.
- Drizzle with remaining olive oil and sprinkle with oregano.
- Bake for 15-18 minutes until crust is golden.
- Let cool 5 minutes, slice, and serve.
