Ingredients

  • 4 Bell peppers Cut in half and deseeded.
  • 1 cup Brown rice Cooked.
  • 1 can (15 oz) Black beans Drained and rinsed.
  • 1/2 cup Corn Fresh or frozen.
  • 1 cup Tomato sauce
  • 1 tsp Cumin
  • To taste Salt and pepper

Steps

  1. Preheat oven to 375F.
  2. Mix rice, beans, corn, tomato sauce, cumin, salt, and pepper.
  3. Fill bell pepper halves with mixture and place in a baking dish.
  4. Cover with foil and bake for 25 minutes.
  5. Remove foil and bake for 10 more minutes.
