Ingredients

  • 2 medium Sweet potatoes Peeled and diced.
  • 1 cup Black beans Cooked or canned, drained and rinsed.
  • 1 medium Red bell pepper Diced.
  • 1/2 medium Onion Diced.
  • 1 medium Avocado Sliced for topping.
  • 1/4 cup Salsa For serving.
  • 1 tbsp Olive oil For roasting.
  • to taste Spices Paprika, cumin, and chili powder.

Steps

  1. Preheat oven to 400°F (200°C).
  2. Toss sweet potatoes, bell pepper, and onion with olive oil and spices.
  3. Spread evenly on a baking sheet and roast for 20-25 minutes until tender.
  4. Stir in black beans and roast for an additional 5 minutes.
  5. Top with avocado slices and salsa before serving.
