Sweet Potato Breakfast Hash
Ingredients
- 2 medium Sweet potatoes Peeled and diced.
- 1 cup Black beans Cooked or canned, drained and rinsed.
- 1 medium Red bell pepper Diced.
- 1/2 medium Onion Diced.
- 1 medium Avocado Sliced for topping.
- 1/4 cup Salsa For serving.
- 1 tbsp Olive oil For roasting.
- to taste Spices Paprika, cumin, and chili powder.
Steps
- Preheat oven to 400°F (200°C).
- Toss sweet potatoes, bell pepper, and onion with olive oil and spices.
- Spread evenly on a baking sheet and roast for 20-25 minutes until tender.
- Stir in black beans and roast for an additional 5 minutes.
- Top with avocado slices and salsa before serving.
