Sweet Potato Chickpea Burgers

Ingredients

  • 2 medium Sweet potatoes Roasted and mashed.
  • 1 can (15 oz) Chickpeas Drained and rinsed.
  • 1/2 cup Rolled oats Blended into a coarse flour.
  • 2 cloves Garlic Minced.
  • 1 tsp Cumin
  • 1 tsp Paprika
  • To taste Salt and pepper
  • 2 tbsp Olive oil For frying.

Steps

  1. Mash chickpeas in a large bowl.
  2. Add mashed sweet potatoes, oats, garlic, cumin, paprika, salt, and pepper; mix well.
  3. Form into patties and chill for 10 minutes.
  4. Heat olive oil in a skillet over medium heat and cook patties for 3-4 minutes per side until golden brown.
  5. Serve with burger buns or lettuce wraps.
