Ingredients

  • 3 large Sweet potatoes Grated.
  • 1 medium Yellow onion Finely diced.
  • 1 large Bell pepper Diced.
  • 3 cloves Fresh garlic Minced.
  • 2 tbsp Ground flaxseed As binder.
  • 1 tsp Smoked paprika
  • 1 tsp Garlic powder
  • 3 tbsp Olive oil For cooking.
  • 1 tsp Salt
  • 1/2 tsp Black pepper

Steps

  1. Grate sweet potatoes and squeeze out excess moisture using a clean kitchen towel.
  2. In a large bowl, combine grated sweet potato, onion, bell pepper, garlic, flax meal, paprika, garlic powder, salt, and pepper.
  3. Mix well until combined.
  4. Heat olive oil in a large skillet over medium-high heat.
  5. Form mixture into 8 patties and place in skillet.
  6. Cook for 5-6 minutes per side until golden and crispy.
  7. Drain on paper towels if needed.
  8. Serve hot with avocado or salsa.
