Sweet Potato Hash Browns
Ingredients
- 3 large Sweet potatoes Grated.
- 1 medium Yellow onion Finely diced.
- 1 large Bell pepper Diced.
- 3 cloves Fresh garlic Minced.
- 2 tbsp Ground flaxseed As binder.
- 1 tsp Smoked paprika
- 1 tsp Garlic powder
- 3 tbsp Olive oil For cooking.
- 1 tsp Salt
- 1/2 tsp Black pepper
Steps
- Grate sweet potatoes and squeeze out excess moisture using a clean kitchen towel.
- In a large bowl, combine grated sweet potato, onion, bell pepper, garlic, flax meal, paprika, garlic powder, salt, and pepper.
- Mix well until combined.
- Heat olive oil in a large skillet over medium-high heat.
- Form mixture into 8 patties and place in skillet.
- Cook for 5-6 minutes per side until golden and crispy.
- Drain on paper towels if needed.
- Serve hot with avocado or salsa.
