Tofu Scramble Breakfast Bowl
Ingredients
- 14 oz block Firm tofu Drained and crumbled.
- 1 large Bell pepper Diced.
- 1 medium Yellow onion Diced.
- 2 cups Spinach Fresh.
- 1 can (15 oz) Black beans Drained and rinsed.
- 1 tsp Ground turmeric For color and flavor.
- 1 tsp Garlic powder
- 2 tbsp Nutritional yeast For cheesy flavor.
- 1 large Avocado Sliced for topping.
- 2 tbsp Olive oil
Steps
- Heat olive oil in a large skillet over medium-high heat.
- Sauté onion and bell pepper for 5 minutes until softened.
- Add crumbled tofu, turmeric, garlic powder, and nutritional yeast.
- Cook for 8-10 minutes, stirring occasionally, until tofu is golden.
- Add black beans and spinach, cooking until spinach wilts.
- Season with salt and pepper to taste.
- Divide into bowls and top with sliced avocado.
- Serve immediately with whole grain toast if desired.
