Ingredients

  • 14 oz block Firm tofu Drained and crumbled.
  • 1 large Bell pepper Diced.
  • 1 medium Yellow onion Diced.
  • 2 cups Spinach Fresh.
  • 1 can (15 oz) Black beans Drained and rinsed.
  • 1 tsp Ground turmeric For color and flavor.
  • 1 tsp Garlic powder
  • 2 tbsp Nutritional yeast For cheesy flavor.
  • 1 large Avocado Sliced for topping.
  • 2 tbsp Olive oil

Steps

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Sauté onion and bell pepper for 5 minutes until softened.
  3. Add crumbled tofu, turmeric, garlic powder, and nutritional yeast.
  4. Cook for 8-10 minutes, stirring occasionally, until tofu is golden.
  5. Add black beans and spinach, cooking until spinach wilts.
  6. Season with salt and pepper to taste.
  7. Divide into bowls and top with sliced avocado.
  8. Serve immediately with whole grain toast if desired.
