Veggie Hummus Wrap Bites
Ingredients
- 4 large Whole wheat tortillas
- 1 cup Hummus
- 2 medium Carrots Julienned.
- 1 medium Cucumber Julienned.
- 1 large Red bell pepper Julienned.
- 2 cups Fresh spinach
- 1 medium Avocado Sliced thin.
- 1 tbsp Lemon juice To prevent browning.
Steps
- Lay tortillas flat and spread 1/4 cup hummus evenly on each.
- Arrange a layer of spinach leaves on each tortilla.
- Place julienned vegetables and avocado slices in a line along one edge.
- Drizzle avocado with lemon juice.
- Roll tortillas tightly from the vegetable side.
- Wrap each roll tightly in plastic wrap and refrigerate for 30 minutes.
- Slice each roll into 6 pinwheel pieces.
- Store in airtight container in refrigerator for up to 2 days.
- Perfect for lunchboxes or afternoon snacks.
