Ingredients

  • 4 large Whole wheat tortillas
  • 1 cup Hummus
  • 2 medium Carrots Julienned.
  • 1 medium Cucumber Julienned.
  • 1 large Red bell pepper Julienned.
  • 2 cups Fresh spinach
  • 1 medium Avocado Sliced thin.
  • 1 tbsp Lemon juice To prevent browning.

Steps

  1. Lay tortillas flat and spread 1/4 cup hummus evenly on each.
  2. Arrange a layer of spinach leaves on each tortilla.
  3. Place julienned vegetables and avocado slices in a line along one edge.
  4. Drizzle avocado with lemon juice.
  5. Roll tortillas tightly from the vegetable side.
  6. Wrap each roll tightly in plastic wrap and refrigerate for 30 minutes.
  7. Slice each roll into 6 pinwheel pieces.
  8. Store in airtight container in refrigerator for up to 2 days.
  9. Perfect for lunchboxes or afternoon snacks.
