Ingredients

  • 2 cups dry Red lentils
  • 2 large Yellow onions Finely diced.
  • 6 cloves Fresh garlic Minced.
  • 2 tbsp Fresh ginger Grated.
  • 3 tbsp Berbere spice blend
  • 2 tbsp Tomato paste
  • 4 cups Vegetable broth
  • 3 tbsp Coconut oil
  • 2 tbsp Lemon juice
  • 6 pieces Flatbread or injera For serving.

Steps

  1. In a large pot, cook diced onions in coconut oil over medium heat for 10 minutes, stirring frequently.
  2. Add garlic, ginger, and berbere spice. Cook for 2 minutes until fragrant.
  3. Stir in tomato paste and cook for 1 minute.
  4. Add red lentils and vegetable broth. Bring to a boil.
  5. Reduce heat and simmer for 25-30 minutes until lentils are tender and stew is thick.
  6. Stir occasionally and add water if too thick.
  7. Season with lemon juice, salt, and pepper.
  8. Serve hot with flatbread or injera for scooping.
