Ethiopian Misir Wot (Spiced Lentil Stew)
Ingredients
- 2 cups dry Red lentils
- 2 large Yellow onions Finely diced.
- 6 cloves Fresh garlic Minced.
- 2 tbsp Fresh ginger Grated.
- 3 tbsp Berbere spice blend
- 2 tbsp Tomato paste
- 4 cups Vegetable broth
- 3 tbsp Coconut oil
- 2 tbsp Lemon juice
- 6 pieces Flatbread or injera For serving.
Steps
- In a large pot, cook diced onions in coconut oil over medium heat for 10 minutes, stirring frequently.
- Add garlic, ginger, and berbere spice. Cook for 2 minutes until fragrant.
- Stir in tomato paste and cook for 1 minute.
- Add red lentils and vegetable broth. Bring to a boil.
- Reduce heat and simmer for 25-30 minutes until lentils are tender and stew is thick.
- Stir occasionally and add water if too thick.
- Season with lemon juice, salt, and pepper.
- Serve hot with flatbread or injera for scooping.
