Lentil Protein Patties
Ingredients
- 1.5 cups dry Brown lentils Cooked.
- 1 cup dry Quinoa Cooked.
- 1/2 cup Oat flour
- 1/4 cup Nutritional yeast
- 1 medium Yellow onion Finely diced.
- 3 cloves Fresh garlic Minced.
- 3 tbsp Ground flaxseed Mixed with 6 tbsp water.
- 1 tsp Ground cumin
- 1 tsp Smoked paprika
- 2 tbsp Olive oil For cooking.
Steps
- Mix flax meal with water and let sit for 10 minutes to create flax egg.
- In a large bowl, mash cooked lentils partially, leaving some texture.
- Add cooked quinoa, oat flour, nutritional yeast, onion, garlic, flax egg, cumin, paprika, salt, and pepper.
- Mix until well combined. Mixture should hold together when pressed.
- Form into 8 patties.
- Heat olive oil in a large skillet over medium heat.
- Cook patties for 5 minutes per side until golden and crispy.
- Serve as burgers with whole grain buns or as protein patties with sides.
- Store leftovers in refrigerator for up to 5 days.
