Ingredients

  • 1.5 cups dry Brown lentils Cooked.
  • 1 cup dry Quinoa Cooked.
  • 1/2 cup Oat flour
  • 1/4 cup Nutritional yeast
  • 1 medium Yellow onion Finely diced.
  • 3 cloves Fresh garlic Minced.
  • 3 tbsp Ground flaxseed Mixed with 6 tbsp water.
  • 1 tsp Ground cumin
  • 1 tsp Smoked paprika
  • 2 tbsp Olive oil For cooking.

Steps

  1. Mix flax meal with water and let sit for 10 minutes to create flax egg.
  2. In a large bowl, mash cooked lentils partially, leaving some texture.
  3. Add cooked quinoa, oat flour, nutritional yeast, onion, garlic, flax egg, cumin, paprika, salt, and pepper.
  4. Mix until well combined. Mixture should hold together when pressed.
  5. Form into 8 patties.
  6. Heat olive oil in a large skillet over medium heat.
  7. Cook patties for 5 minutes per side until golden and crispy.
  8. Serve as burgers with whole grain buns or as protein patties with sides.
  9. Store leftovers in refrigerator for up to 5 days.
