Spiced Peanut Lentil Stew
Ingredients
- 2 cups dry Red lentils
- 2 cups dry Brown rice
- 1/2 cup Natural peanut butter
- 1 can (28 oz) Diced tomatoes
- 1 large Sweet potato Cubed.
- 1 large Yellow onion Diced.
- 4 cloves Fresh garlic Minced.
- 1 tbsp Fresh ginger Grated.
- 2 tsp Ground cumin
- 1 tsp Ground coriander
- 1/4 tsp Cayenne pepper
- 4 cups Vegetable broth
- 2 tbsp Coconut oil
- 1/2 cup Fresh cilantro For garnish.
Steps
- Cook brown rice according to package directions.
- Heat coconut oil in a large pot over medium heat.
- Sauté onion until soft, about 5 minutes.
- Add garlic, ginger, cumin, coriander, and cayenne. Cook for 1 minute.
- Add red lentils, sweet potato, diced tomatoes, and vegetable broth.
- Bring to a boil, then reduce heat and simmer for 25 minutes until lentils are tender.
- Stir in peanut butter until well combined and creamy.
- Season with salt to taste.
- Serve stew over brown rice and garnish with cilantro.
