Ingredients

  • 2 cups dry Red lentils
  • 2 cups dry Brown rice
  • 1/2 cup Natural peanut butter
  • 1 can (28 oz) Diced tomatoes
  • 1 large Sweet potato Cubed.
  • 1 large Yellow onion Diced.
  • 4 cloves Fresh garlic Minced.
  • 1 tbsp Fresh ginger Grated.
  • 2 tsp Ground cumin
  • 1 tsp Ground coriander
  • 1/4 tsp Cayenne pepper
  • 4 cups Vegetable broth
  • 2 tbsp Coconut oil
  • 1/2 cup Fresh cilantro For garnish.

Steps

  1. Cook brown rice according to package directions.
  2. Heat coconut oil in a large pot over medium heat.
  3. Sauté onion until soft, about 5 minutes.
  4. Add garlic, ginger, cumin, coriander, and cayenne. Cook for 1 minute.
  5. Add red lentils, sweet potato, diced tomatoes, and vegetable broth.
  6. Bring to a boil, then reduce heat and simmer for 25 minutes until lentils are tender.
  7. Stir in peanut butter until well combined and creamy.
  8. Season with salt to taste.
  9. Serve stew over brown rice and garnish with cilantro.
