Ingredients

  • 1 medium Sweet potato Roasted for best flavor.
  • 1/2 cup Quinoa Cooked and cooled.
  • 1 cup Spinach Fresh or lightly wilted.
  • 1 tbsp Tahini For the dressing.
  • 1 tbsp Lemon juice For the dressing.
  • 1 clove Garlic Minced.

Steps

  1. Roast the sweet potato at 400°F for 30 minutes or until tender.
  2. Cook the quinoa according to package instructions.
  3. Mix tahini, lemon juice, and garlic to make the dressing.
  4. Assemble the bowl with spinach, quinoa, roasted sweet potato, and drizzle with dressing.
