Ingredients
- 1 medium Sweet potato Roasted for best flavor.
- 1/2 cup Quinoa Cooked and cooled.
- 1 cup Spinach Fresh or lightly wilted.
- 1 tbsp Tahini For the dressing.
- 1 tbsp Lemon juice For the dressing.
- 1 clove Garlic Minced.
Steps
- Roast the sweet potato at 400°F for 30 minutes or until tender.
- Cook the quinoa according to package instructions.
- Mix tahini, lemon juice, and garlic to make the dressing.
- Assemble the bowl with spinach, quinoa, roasted sweet potato, and drizzle with dressing.
