Ingredients

  • 2 large Sweet potatoes Cubed.
  • 1 can (15 oz) Black beans Drained.
  • 1 cup dry Quinoa
  • 1 large Avocado Sliced.
  • 2 cups Kale Chopped.
  • 3 tbsp Tahini
  • 2 tbsp Lemon juice
  • 1 tsp Ground cumin
  • 2 tbsp Olive oil

Steps

  1. Preheat oven to 425°F (220°C).
  2. Toss sweet potato cubes with olive oil, cumin, salt, and pepper.
  3. Roast for 25 minutes until tender and caramelized.
  4. Cook quinoa according to package directions.
  5. Warm black beans in a pot.
  6. Massage kale with a bit of olive oil and lemon juice.
  7. Make tahini dressing: whisk tahini with lemon juice and 2 tbsp water.
  8. Divide quinoa into bowls and top with sweet potato, black beans, kale, and avocado.
  9. Drizzle with tahini dressing and serve warm.
