Sweet Potato Protein Bowl
Ingredients
- 2 large Sweet potatoes Cubed.
- 1 can (15 oz) Black beans Drained.
- 1 cup dry Quinoa
- 1 large Avocado Sliced.
- 2 cups Kale Chopped.
- 3 tbsp Tahini
- 2 tbsp Lemon juice
- 1 tsp Ground cumin
- 2 tbsp Olive oil
Steps
- Preheat oven to 425°F (220°C).
- Toss sweet potato cubes with olive oil, cumin, salt, and pepper.
- Roast for 25 minutes until tender and caramelized.
- Cook quinoa according to package directions.
- Warm black beans in a pot.
- Massage kale with a bit of olive oil and lemon juice.
- Make tahini dressing: whisk tahini with lemon juice and 2 tbsp water.
- Divide quinoa into bowls and top with sweet potato, black beans, kale, and avocado.
- Drizzle with tahini dressing and serve warm.
