Tofu Scramble Protein Wrap
Ingredients
- 16 oz block Firm tofu Drained and crumbled.
- 4 large Whole wheat tortillas
- 1 can (15 oz) Black beans Drained.
- 2 cups Spinach Fresh.
- 1 large Avocado Sliced.
- 3 tbsp Nutritional yeast
- 1 tsp Ground turmeric
- 1 tsp Garlic powder
- 1/2 tsp Ground cumin
- 1/2 cup Salsa
- 2 tbsp Olive oil
Steps
- Heat olive oil in a large skillet over medium-high heat.
- Add crumbled tofu, nutritional yeast, turmeric, garlic powder, and cumin.
- Cook for 8-10 minutes, stirring occasionally, until tofu is golden.
- Add black beans and spinach. Cook until spinach wilts.
- Season with salt and pepper to taste.
- Warm tortillas in a dry pan or microwave.
- Divide tofu scramble among tortillas.
- Top with avocado slices and salsa.
- Fold into wraps and serve immediately or wrap tightly for meal prep.
