Ingredients

  • 16 oz block Firm tofu Drained and crumbled.
  • 4 large Whole wheat tortillas
  • 1 can (15 oz) Black beans Drained.
  • 2 cups Spinach Fresh.
  • 1 large Avocado Sliced.
  • 3 tbsp Nutritional yeast
  • 1 tsp Ground turmeric
  • 1 tsp Garlic powder
  • 1/2 tsp Ground cumin
  • 1/2 cup Salsa
  • 2 tbsp Olive oil

Steps

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add crumbled tofu, nutritional yeast, turmeric, garlic powder, and cumin.
  3. Cook for 8-10 minutes, stirring occasionally, until tofu is golden.
  4. Add black beans and spinach. Cook until spinach wilts.
  5. Season with salt and pepper to taste.
  6. Warm tortillas in a dry pan or microwave.
  7. Divide tofu scramble among tortillas.
  8. Top with avocado slices and salsa.
  9. Fold into wraps and serve immediately or wrap tightly for meal prep.
