Ingredients

  • 1.5 cups dry Red lentils
  • 1 large Sweet potato Diced.
  • 2 large Carrots Diced.
  • 1 large Yellow onion Diced.
  • 4 cloves Fresh garlic Minced.
  • 3 tbsp Fresh ginger Grated.
  • 2 tsp Ground turmeric
  • 1 tsp Ground cumin
  • 1 can (14 oz) Coconut milk
  • 4 cups Vegetable broth
  • 2 cups Spinach
  • 2 tbsp Coconut oil

Steps

  1. Heat coconut oil in a large pot over medium heat.
  2. Sauté onion for 5 minutes until soft.
  3. Add garlic, ginger, turmeric, and cumin. Cook for 1 minute until fragrant.
  4. Add red lentils, sweet potato, carrots, and vegetable broth.
  5. Bring to a boil, then reduce heat and simmer for 20 minutes until lentils are tender.
  6. Stir in coconut milk and spinach.
  7. Cook for 5 more minutes until spinach wilts.
  8. Season with salt and pepper to taste.
  9. Serve hot for soothing post-workout recovery.
