Turmeric Ginger Recovery Soup
Ingredients
- 1.5 cups dry Red lentils
- 1 large Sweet potato Diced.
- 2 large Carrots Diced.
- 1 large Yellow onion Diced.
- 4 cloves Fresh garlic Minced.
- 3 tbsp Fresh ginger Grated.
- 2 tsp Ground turmeric
- 1 tsp Ground cumin
- 1 can (14 oz) Coconut milk
- 4 cups Vegetable broth
- 2 cups Spinach
- 2 tbsp Coconut oil
Steps
- Heat coconut oil in a large pot over medium heat.
- Sauté onion for 5 minutes until soft.
- Add garlic, ginger, turmeric, and cumin. Cook for 1 minute until fragrant.
- Add red lentils, sweet potato, carrots, and vegetable broth.
- Bring to a boil, then reduce heat and simmer for 20 minutes until lentils are tender.
- Stir in coconut milk and spinach.
- Cook for 5 more minutes until spinach wilts.
- Season with salt and pepper to taste.
- Serve hot for soothing post-workout recovery.
